Pumpkin Pie Oatmeal

3/4 cup low-fat milk (or soy or almond milk)
6 Tbsp water
1/4 cup old-fashioned oats
Pinch of cinnamon
Pinch of nutmeg
1/8 cup (2 Tbsp) canned pumpkin
1/8 cup (2 Tbsp) sliced almonds
Sweetener or artificial sweetener as needed/or not
1/8 cup water
1/2 scoop vanilla protein powder (equal to about 14 grams protein)

In a small pot, bring milk and water to a boil over medium heat. Add oats, cinnamon and nutmeg. Reduce heat to medium-low and simmer until liquid is absorbed, about 7-10 minutes, stirring occasionally.

Once liquid is absorbed, stir in pumpkin, almonds and sweetner (if desired); set aside.

Combine water and protein powder in a separate bowl. Mix with a fork until protein is dissolved. For a smoother consistency, mix power with water in a blender.

Pour protein mixture over oatmeal and serve.
