2 16-oz cans of fat free refried beans (regular
or black beans)
1 16-oz container of fat free sour cream
1/2 packet of taco seasoning
2 tomatoes (diced)
1/2 bunch of scallions (chopped)
1/2 package of matchstick carrots (chopped finer)
green, red or yellow bell pepper (chopped)
1/2 package of low fat shredded Mexican cheese
small can of sliced olives (optional)
1 bag of tortilla chips such as: Tostitos
Baked Cheddar Quesadilla
Directions:
In a casserole dish, spoon in refried beans. If you'd like this
layer thicker, use 3 cans. Stir in 1/2 seasoning packet into the
sour cream container and mix well. Spread on top of beans.
Add all the vegetables and sprinkle cheese on top. Garnish with
olives if desired.
