The following is a recipe to help you use up those zucchini's in your garden.
Zucchini
Special in a Slow Cooker
1 medium to large zucchini, peeled and sliced
1 medium onion, sliced
1 quart of stewed tomatoes with juice OR 2 14 1/2-oz cans stewed
tomatoes with juice
1/4 tsp salt (optional)
1 tsp dried basil (or more)
8 oz- low fat shredded mozzarella cheese
1. Layer zucchini, onion and tomatoes in slow
cooker.
2. Sprinkle with salt, basil, and cheese
3. Cover and cook on Low for 6-8 hours
Makes about 4 servings, About 1 00 calories each
