box Pasta Roni - Chicken,
Chicken-Broccoli, or Shells and White Cheddar
cups frozen or fresh broccoli
cup dry whole wheat pasta such as Hodgson Mills™ or
Prince’s Healthy
Harvest™- any shape
Skim milk and water |
Directions|
Prepare box of Pasta Roni based on instructions on the box,
OMITTING the 2 Tbsp of butter it always calls for, AND adding
1½ cups of water to box instructions to accommodate the extra
pasta.
While pasta is cooking, microwave the broccoli
Mix all ingredients together, let sit for 5 minutes and
serve.
This makes about 4 cups, containing about
175 calories a cup.
It’s a good fiber source and low fat
since the butter is eliminated and the sauce packet is
dispersed. By adding the broccoli and whole wheat pasta we’ve
increased the fiber and nutrients.
Any vegetable can be substituted for the
broccoli. |
