I just got a new toy for the kitchen. A quesadilla maker. You can get them anywhere……Target, Meijers, Kmart etc. They cost about $30.
It’s very similar to a George Forman grill, you can cook very low fat and nothing sticks. I love quesadillas but they are so high fat at restaurants, so this is a great option. I’ve even been eating them for breakfast on the weekends. They cook in 5 minutes and the quesadilla maker is really easy clean up afterwards. The grill even puts the indentations in them so it’s easy to cup into triangles.
Here’s a couple recipes for the maker.
2 tortillas or whole wheat lavash
¼ cup 2% shredded cheese
A couple tablespoons of scallions (green onions)
A couple tablespoons of salsa
Place tortilla on bottom part of grill, add ingredients, top with other tortilla, lock and grill for a couple minutes. Check on it for browning, because it cooks fast. My husband burned his the first time. You don’t even need to use Pam.
2 tortillas or lavash
¼ cup 2% shredded cheese
A couple tablespoons of fresh or frozen thawed spinach
A couple tablespoons of cut up artichokes
2 tortillas or lavash
Shredded cheese
Veggie crumbles
Sprinkled taco powder
Of course you can add cooked chicken strips too. I’m a veg head so I use the soy stuff. Get creative and have fun. The maker comes with a recipe booklet too. My clients are having fun with their makers too.
A whole quesadilla counts as 3-4 starches, 2 proteins, 0-1 fat, or about 400-450 calories.
