Mango Salsa

1 baking sheet of corn (frozen or canned and drained)
Start baking at 400 degrees until slightly browned. Cut the rest of the veggies while you’re waiting.

1 mango, cut into small chunks
2 peppers, any color cut into small pieces
1 small red onion, chopped
1 small jalapeno, chopped (use gloves if necessary)
1 can black beans, rinsed
2 Tbsp lime juice
1 Tbsp olive oil (optional)

Mix browned corn and all the rest of the ingredients together. Serve chilled with tortilla chips, veggies, or pita.

The counts will vary depending on sizes of fruits and veggies. ˝ cup counts approximately as one carbohydrate serving.
