Pleasin’ Yogurt Breakfast Parfait
(Recipe adapted from Elizabeth Ward M.S, R.D. and a mother of three)

Prep time 5 minutes
Makes one fairly large serving

1 cup lowfat vanilla yogurt (with sugar or Nutrasweet- your choice)
½ cup crunchy lowfat cereal or granola, divided
½ cup fresh fruit, sliced (such as strawberries, blueberries, pineapple)

To assemble parfait, begin with yogurt in the bottom of a clear bowl or tall glass. Add 2 Tbsp cereal and ¼ cup fruit, repeat, and top with remaining cereal.

Nutritional Information:
Calories: 310-434 depending on the yogurt
Fat: 4 grams
Sat Fat: 2 grams
Protein: ≈ 14 grams
Fiber: ≈ 4 grams
Calcium: 435 mg

If the calories seem high to you, 1 egg, 2 slices of toast with a bit of jam and a small orange juice is about 355 calories.

With the upcoming holidays and craziness, I thought this would be a quick and easy breakfast that is also packed with nutrients.
