2 Pineapple Angel Food Cake Recipes- great for diabetics

#1 Pineapple Pudding Cake
Angel food cake mix (don't add anything to it except pudding and pineapple)
1 pkg instant sugar free vanilla pudding
1 can (20 oz) crushed pineapple in its own juice

Mix cake-mix, pudding, and undrained pineapple together. Pour into a 9 x 13 pan sprayed with Pam, bake at 350 degrees for 25-30 minutes. Top with Sugar-free cool whip.
10 servings
About 160 cals each. 2 carb servings.


#2 Angel Lush with Pineapple
1 small pkg Vanilla Flavored Sugar Free Instant Pudding
1 can (20 oz) crushed pineapple in juice, undrained
1 cup sugar free Cool Whip thawed
1 pkg (10 oz) prepared round angel food cake
10 small strawberries

Mix dry pudding and pineapple with juice in a medium bowl. Gently stir in whipped topping. Cut cake horizontally into 3 layers. Place bottom cake layer, cut side up on a serving plate. Spread 1 1/2 cups of the pudding mixture onto cake layer; cover with middle cake layer. Spread 1 cup of the pudding mixture onto middle cake layer and top with remaining cake layer. Spread with the remaining pudding mixture. Decorate with strawberries Refrigerate at least 1 hour or until ready to serve. Makes 10 servings.
