Chef Brian’s Simplified Salsa System

I love Chef Brian’s salsas SO MUCH I eat them like gazpacho!!!

PICO DE GALLO (Base)
1/2 cup jalapeno-diced fine (If you want the heat, use the seeds, if you don’t use the seeds)
1/2 cup onion- diced fine
1/2 cup cilantro- chopped fine
Juice of one lime
Bit of garlic, minced

Mix ingredients in a bowl

BASIC TOMATO SALSA
Mix 1/4 to 1/2 cup base with 2 cups fresh tomatoes or 1 (14-oz) can diced tomatoes

BLACK BEAN & CORN SALSA
Add 1/4 cup each black beans and corn to basic tomato salsa


SALSA VERDE

Simmer 2 cups peeled, diced tomatillos with 1/2 cup base and 2 Tbsp cider vinegar. Then chill

FRUIT SALSA'S
Mix 2 Tbsp base PER CUP of your favorite fruit; peeled, seeded, and diced.
At the salsa making class he taught he did watermelon, pineapple and mango (separately) and it was awesome!
